Ingredients
1 avocado 2 Roma tomatoes
½ bunch cilantro (finely chopped)
1 cucumber (#3 cone)
2 cups cooked Quinoa
Juice of 1 lime
Sea salt to taste
Directions
Chop avocado and tomatoes in small cubes. Add cucumber, cilantro and quinoa. Juice lime and sprinkle with salt. Stir and chill before serving this refreshing and colorful salad
