Ingredients
12 beaten eggsShredded vegetables of your choice (#1 or #2 cone)
Cooked meat (optional)
½ cup shredded cheese (e.g. Colby Jack, Cheddar, Mozzarella, etc.) (#1 or #2 cone)
Cooking spray
Directions
Coat 11” Skillet with cooking spray and preheat on medium. Pour beaten
eggs into skillet; add vegetables and meat (optional). Cover with lid and turn
heat down to medium-low. Cook approximately 10 min. checking frequently until
egg begins to pull away from the side of the pan and the top is mostly dry.
Sprinkle cheese on top and replace lid until cheese melts.
