Pumpkin Bars

Suggested Piece: 1½ Qt Sauce Pan, 9 x 13 Bake & Roast Pan, and Blender/Food Processor

Ingredients
2 cup pumpkin (#2 cone)
½ cup apple sauce (#2 cone)
4 eggs                                                                               
2 tsp cinnamon                                                                                                                  
1 tsp vanilla                                                                 
2 cup flour                                                                      
1 tsp baking soda                                                     
2 tsp baking powder                                                 
½ tsp salt                                                                 
2 cups sugar

Directions
Using the MEDIUM-CLICK-LOW method (on low for 10 minutes), cook both pumpkin and apple in 1½  Qt Sauce Pan. Purée both in a blender, set aside. Combine eggs, puréed pumpkin & apple sauce, cinnamon, and vanilla. Mix together the dry ingredients in a separate bowl, and then add dry mix to the prepared wet mixture. Pour batter into 9 x 13 Bake & Roast Pan and bake for 20-25 minutes in the oven at 350˚.
