Using the #1 cone finely grate an unpeeled beet into 1 Qt Sauce Pan. Turn heat to medium, cover and wait until vapo-valve clicks then reduce to low for 10 minutes. Transfer entire contents to blender and blend until smooth. Store in refrigerator or freeze for a later date.
